Pulled "Jack Fruit" BBQ

You have all seen the Buzz Feed videos about taking Jack Fruit, adding BBQ sauce and pulling it like pulled pork.  The hip young folks on the video claim it tastes like pulled pork and you cannot tell the difference.  Are the cool kids telling the truth? YES they are!

We have all been there.  You find a recipe that is supposed to be just like your favorite mac and cheese, made with cashews.  A recipe that is supposed to be just like grandma's meatloaf, only with lentils.  And finally, a sweet, tangy, bbq sandwich that is supposed to be like pulled pork, but made with a tropical fruit.  I have tried the first two, and not with the best success, but I am not giving up!  The last one, pulled jack fruit bbq, was perfect the first time around!

1 15 oz can of Jack Fruit, drained

1 1/2 cup ketchup
1/2 cup packed dark brown sugar
3 medium garlic cloves, finely chopped
3 tablespoons cider vinegar
1 1/2 teaspoons paprika
3/4 teaspoon freshly ground black pepper
1/4 teaspoon celery salt
1/2 cup water

Take jack fruit out of can and drain.  Place in a pan with 2 teaspoons olive oil.  Cook for 5 minutes.  While the jack fruit is cooking, mix the bbq ingredients together, add to the pan of jack fruit.  Simmer for 5 minutes.  Take two forks and start shredding the fruit.  Simmer for 5 more minutes, stirring to make sure the sauce gets on all the fruit.

Remove from heat and add to buns.  Serve with coleslaw, french fries or what ever your hearts desire!


Seer for 5 minutes

Add BBQ sauce and simmer.

Shred.

Add to buns!
