Jackfruit Curry

Jackfruit.  The fruit that is supposed to be so versatile that you can make "pulled pork" or dessert with it.  Is this tropical fruit as good as all the raves on Pinterest?    I would have to say, YES!

My son loves curry!  I love curry!  Let's have curry for dinner one night!  The reason why I love curry, not only because of the spices and creamy coconut milky goodness, but because I can put a whole lot of vegetables in there, that Zeke will not normally eat.  (Mom trick!)

I had browsed around Pintrest for curry recipes for the family and I found one with jackfruit.  I decided to make a big batch of curry, add chicken to the boys part and then jackfruit to mine.  The result was a success!


One can of jackfruit in water or fresh jackfruit  (durian fruit) 10 to 12 bulbs, chopped

  • 1 tbsp coconut oil
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 3 garlic cloves, minced
  • 1 tbsp minced fresh ginger
  • ½ tsp freshly ground black pepper
  • 1 tsp salt or to taste
  • ½ tsp turmeric
  • 2 tsp ground coriander
  • 1 tsp curry powder
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 can (5.5 oz) coconut milk
  fresh cilantro or parsley for garnish
  • cooked brown rice for serving

Simmer the first 12 ingredients for 30 minutes.  
In sauté pan, sauté  jackfruit in a small amount of oil.  The jackfruit from a can "shreds" like chicken.  Fresh jackfruit does not.  
Add brown rice to plate, add jackfruit and then the curry sauce.  Garnish with cilantro or parsley.  Enjoy!

**For blended food families, sauté chicken or shrimp in a separate pan, add to brown rice, cover with curry sauce**

What is jackfruit? I would have to say jackfruit is a gift to us from God!  It is delicious, nutritious and versatile!
