Sweet Potato Fajitas

Cinco de Mayo is right around the corner.  What better way to celebrate than to eat tacos, fajitas, chips and salsa and guacamole!  Here is a simple, enjoyable, plant based recipe, so you can join in the fun too!

Sweet potato fajitas:  Recipe {HERE}

In a pan, saute onion, tomato and beans together.

Add the spices and simmer

Add the cooked and cooled sweet potato, bring to a nice bubble.

Throw on whole wheat tortilla shells.

Add your favorite toppings.  Eat.

What is absolutely perfect about this dish, is that by adding one thing, I can feed my whole family, and not have to make two meals.  Organic diced, cooked chicken.  I have said it before, and I will say it again, I love being plant based.  My husband and son are more than willing to eat what I place in front of them, but I know that I need to bring healthy dishes to the table, that they WILL eat.  I do not mind adding a bit of cooked chicken here in there to keep them happy.  With the majority of the fajita filling being plant based, I know that they are getting protein (YES PROTEIN) fiber, micro and macro nutrients.  That makes me joyful!

In a separate pan, I cook up diced chicken breast, and add it to the fajita.  

Store extra fajita mixture (separate from chicken) in a container for lunch the next day!
