Vegan Pesto Tomato Pasta Salad (That's a mouth full!)

Potluck.  The day that I use to love at work…now it is almost like torture.  I have chosen to live a Plant Based Lifestyle, and sometimes large food gatherings can be very hard on me!  I am HUMAN AFTER ALL!  The answer to this conundrum is to make food that I can eat and maybe turn on the taste buds of my co workers to something a bit more healthy and delicious too!

I love, Love, LOve, LOVe, LOVE  pasta salad.  I also LOVE pesto.  So here is a combination that is sure to knock your pesto loving socks off.   You can serve it hot or cold.  I had it hot on a baked sweet potato for dinner, it was good.  I had it cold the next day at work and IT WAS SUPER GOOD!  You decide, just enjoy it!


Printable recipe here VEGAN PASTA SALAD

1 medium yellow onion chopped
1 batch of homemade pesto (see below for recipe)
1 small jar of chopped sun dried tomatoes packed in olive oil (drained, do save a couple tablespoons of the oil from the jar)
1 pound of macaroni pasta, cooked and drained

Pesto 
1/3 cup pine nuts
2/3 cup olive oil
5 gloves of garlic
1/3 cup nutritional yeast
1 bunch of fresh basil leaves
salt and pepper to taste

Toast pine nuts over medium flame.  Gradually mix together the pine nuts, olive oil, garlic, nutritional yeast and basil.  Place in a food processor, process until smooth.  Add salt and pepper to taste.

Once your noodles are cooled, add the chopped onion, homemade pesto, jar of chopped tomatoes and oil.  Stir well.   

Serve warm or place in fridge to serve cold later!

Look at that!  It screams, eat me!  

A complete dinner served over a sweet potato!





Remember, just because you are going plant based, doesn't mean you have to go taste free!:)
