Krazy Good Kale Chips

Kale, kale, kale...it is the new rage that everyone is talking about.  Make kale chips at home, so much better for you than potato chips.  Couple things, yes they are better for you than potato chips, but they are also two different things that can not be compared.  Kale chips can not be dipped for one.  They are not salty or crunchy.  They don't clog your arteries either!:)  BUT they are very good!  They kind of melt in your mouth.  They are good for you!  And you can eat a whole bunch and not worry about it!

I had a couple people ask me "what is kale?"  Kale is one of the healthiest vegetables out there!  It belongs to the wild cabbage family and is in the family of broccoli, cauliflower and collards. When you look at it, it looks like lettuce.  Go ahead and throw some in your lettuce salad and reap the benefits!  Anyway, kale has in one cup, 33 calories, 2.6 g fiber, 2.9 g protein, vitamins, A, C, B-6, K and calcium.  Kale may also have anti inflammatory benefits!  All around, a good wholesome vegetable!  Now, let's get going on these chips!

Three easy ingredients!  Fresh, clean kale, olive oil and kosher salt.  

My sister and I went to Des Moines Farmers Market and I got this big bag of yummy kale!  


I cut off the stems.

Piled it in a bowl.

Added the olive oil.

The little bit of salt.

Mixed it well with my hands.

Spread out on a baking stone, or pan.  Bake at 350 for 10 to 12 minutes.

DONE!!!!!!!

Perfection!  

They really do melt away in your mouth.  I ate them all....
