Quinoa Veggie Salad

Who doesn't love quinoa?  Well, apparently a lot of people!  One thing that everyone kept asking me is, what is quinoa?  Go here to learn all about it, QUINOA.  It is an ancient grain that the Andean culture ate over 3000 years ago. They knew a good thing when they saw it!  Quinoa is packed full of protein, 14 g per serving, fiber 7 g, chalked full of minerals and essential amino acids!  What is not to love!

I think some people are a little scared to try new things.  Quinoa, I have heard, is an acquired  taste, I liked it the first time I ate it.  But why not try this recipe and see what you think!  Something new, healthy and tasty...don't forget tasty!

Flax seed!  Extra fiber!

Anyone else use different kinds of oils?  Or are you still using canola oil?  Olive oil?  Step out of your comfort zone and try something new!  

Ready to shake and mix it up!

Add the cooled quinoa.  Shake mix again!

Add the avocado~ 
Garnish with spinach! 

I was proud of my salad I made up!  I thought it was wonderful! I guess I will keep trying new things,  hoping people will be willing to try them too and realize how much more food  is out there to enjoy and that good for you!
